Braised Cabbage and Apples

3/4 cup or 1 medium Spanish Onions, thinly sliced
1 teaspoon Garlic, chopped
1/4 cup Oil, Vegetable
1.5 teaspoons Salt
1 teaspoon Black Pepper
1/4 cup Cider Vinegar
1 1/2 cups Apple Juice
1 3/4 lbs Red Cabbage, thinly sliced
1 med. Head (Approx. 2 lbs.) Chinese Cabbage, thinly sliced
1 cup (1/4 lb. ) Apples, peeled & diced
1. In a tilt skillet or large braising pan, saute onions and garlic in the oil, salt, and pepper. Cook until soft.
2. Add the vinegar and apple juice. Mix in the cabbages and apples.
3. Stir until coated.
4. Cook, stirring often, until the cabbage is soft; about 1 hour.
